Camp Recipe: Mac n' Meat

This is a camper favorite! Typically served at Friday lunch, Mac'n Meat is an easy, filling, oh so yummy recipe. The best part? You likely already have all of the ingredients at home.

Recipe serves 4-6 Ingredients: 4 tablespoons butter 4 tablespoons plain flour 2 cups milk or half and half salt/pepper to taste 1/2 teaspoon Italian seasoning, or more to taste 1 teaspoon onion powder, or more to taste 1/3 cup shredded parmesan (or more), divided 1 cup shredded mozzarella (or more), divided 1/2 pound (or more) cooked ground chicken, turkey, or beef 1 pound penne rigate pasta (or other noodle), cooked al dente


Preparation:Preheat oven to 350 degrees. In a medium saucepan, melt butter over low heat and whisk in flour; cook for 1min, stirring constantly. Add milk and whisk until thickened and heated through. Whisk in seasonings and adjust to taste preference. Whisk in 1/4 cup mozzarella until incorporated, repeat with 18 cup parmesan. Taste and adjust seasonings and cheeses. Thin with milk if necessary or add cheese to thicken. Remove from heat and set aside. Ladle 3/4 of sauce over cooked pasta and stir, incorporating all noodles. Add meat and stir, adding more sauce if needed. Pour into greased casserole dish and top with remaining cheeses. Bake for 20-25 minutes, covered. Enjoy!
